Ingredients:

  • 1 cup brown rice
  • 2 cups water
  • 1 zucchini, sliced into rounds
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions:

  1. Rinse the brown rice in a fine mesh strainer and add it to a pot with the water. Bring the water to a boil, then reduce the heat to low and simmer, covered, for 45 minutes.
  2. While the rice is cooking, heat the olive oil in a pan over medium heat. Add the zucchini, bell pepper, onion, and garlic to the pan and cook until the vegetables are tender, about 5-7 minutes.
