Ugali is a popular staple dish in Kenya, made from cornmeal and water. It is often served with a variety of dishes, such as stews or vegetables. Here is a simple recipe for how to make Ugali:

  • 1 cup of cornmeal
  • 2 cups of water
  • 1/4 teaspoon of salt (optional)

  1. In a medium saucepan, bring the water to a boil over medium-high heat.
  2. Slowly add the cornmeal to the boiling water, stirring constantly with a wooden spoon to avoid lumps.
  3. Add the salt, if using, and continue to stir until the mixture thickens and pulls away from the sides of the pan, about 5-10 minutes.
  4. Remove the pan from the heat and let the Ugali cool slightly.
  5. Use your hands to shape the Ugali into small balls or patties. Serve immediately with your choice of stew or vegetables.

Enjoy your Ugali!
